Old Fashioned Coconut Cream Pie

Ingredients

  • 1 1/2 cup coconut milk or one can and Rich Whip to equal 3 cups
  • 3 yolks
  • 3/4 cup sugar
  • 1/2 cup corn starch
  • 1/4 tsp salt
  • 1 cup flaked coconut,toasted
  • 1 tsp vanilla extract
  • 1 9" pie crust baked
  • 1 cup frozen whipped topping
  • 2 Tbs confec. sugar
  • 1 tsp vanilla extract

Preparation

Step 1

Mix coconut milk(or cream),rich whip,eggs,sugar,cornstarch and salt. Bring to a boil over low heat,stirring constantly,(or mix in a microwave bowl,micro. it for 5 min. after each minute whisk until it's thick)
Remove from heat and stir in 3/4 cup of the coconut and the vanilla extract. Pour into pie shell and chill 2-4 hrs. or until firm.
whip the whip and add the confec. sugar and vanilla extract. Top pie with the whip and remaining 1/4 cup of toasted coconut.
To toast coconut: Spread it in an ungreased pan and bake in a 350 oven for 5-7 min.or until golden brown,stirring occasionally.
