Sausage and Peppers

Ingredients
- 2 Tbsp olive oil
- 12 Italian sausages, hot or sweet (about 2 lbs)
- 1 large onion, sliced
- 1 tbsp tomato paste
- 2 each - large red peppers and yellow peppers - rimmed seeded cut into 1/2 wide strips
- 4 garlic cloves minced
- salt and pepper
- 1 tbsp balsamic vinegar

Preparation
Step 1
Heat oil in large skillet over med-high heat. Add sausages and cook until well browned on all sides, about 10 min. Remove from pan and set aside.
Pour off all but 1 tbsp of oil. Add the onions and cook until golden, about 5 min. Stir in tomato paste and cook for 1 min.
Add peppers, garlic and season with salt and pepper to taste. Cook until peppers are wilted, about 5 min.
Return sausages to pan, cover and cook over med heat, stirring frequently, until meat is cooked through - about 12 min. Stir in vinegar.
