Sesame Peanut Noodle Salad

Ingredients
- 1/2 lb. thin spaghetti
- 1/2 lb. snow peas (can substitute sugar snap peas) blanched
- 1/2 c. vegetable oil
- 1/4 c. rice vinegar
- 1/3 c. soy sauce
- 2 tbsp. sesame oil
- 1 tbsp. honey
- 2 garlic cloves, minced
- 1 tbsp. freshly grated ginger
- 1/2 c. smooth peanut butter
- Salt and pepper
- 1 cucumber, peeled, seeded and sliced into thin sticks
- 1 red bell pepper, thinly sliced
- 4 green onions, sliced diagonally
- 1/4 c. chopped peanuts
- 1 tbsp. toasted sesame seeds

Preparation
Step 1
Cook spaghetti according to package directions. I blanch snow peas or sugar snap peas with pasta for the last minute or so. Drain pasta and peas and rinse with cold water. Drain well.
Mix oil, vinegar, sesame oil, honey, garlic, ginger, soy, peanut butter, salt and pepper together. Pour over pasta and peas. Add remaining ingredients and toss well to mix.
