Ingredients
- 12 oz boneless chicken breasts chopped
- 1 large onion chopped
- 1 1/2 tsp chili powder
- 1 1/2 tsp ginger
- 1/4 tsp cayenne
- 1 tbs oil
- 1 tbs flour
- 1 can coconut milk
- 1 tbs peanut butter
- 1 can cannellini beans rinsed and drained
- 3 med carrots shredded
- 1 stalk celery sliced
- 1 green onion sliced
- 5 cloves garlic minced
- 2 tbs fresh basil
- jasmine rice

Preparation
Step 1
Saute chicken, onion, chili powder, ginger, 1/2 tsp salt, peppers in oil for 608 min.
Stir in flour and cook 1 min more. Stir in coconut milk, peanut butter and 1 c water. Bring to a boil, stir in beans, carrots, celery, grn onion, garlic and basil. Return to boil. reduce heat and simmer covered 10 min. Serve with rice. Top with basil.
