    oz boneless chicken breasts chopped

    large onion chopped

  • 1 1/2

    tsp chili powder

  • 1 1/2

    tsp ginger

  • 1/4

    tsp cayenne

    tbs oil

    tbs flour

  • 1

    can coconut milk

  • 1

    tbs peanut butter

  • 1

    can cannellini beans rinsed and drained

  • 3

    med carrots shredded

  • 1

    stalk celery sliced

  • 1

    green onion sliced

  • 5

    cloves garlic minced

  • 2

    tbs fresh basil

  • jasmine rice

Directions

Saute chicken, onion, chili powder, ginger, 1/2 tsp salt, peppers in oil for 608 min. Stir in flour and cook 1 min more. Stir in coconut milk, peanut butter and 1 c water. Bring to a boil, stir in beans, carrots, celery, grn onion, garlic and basil. Return to boil. reduce heat and simmer covered 10 min. Serve with rice. Top with basil.
