Smoky Sausage One-Pot

Ingredients
- 12 Less than 5% fat sausages
- 198 g (7oz) green beans, cut into 1 inch pieces
- 2 onions, thinly sliced
- 198 g (7oz) butternut squash, peeled and cubed
- 2 red peppers, deseeded and chopped
- 1 tsp smoked paprika
- 2 tsp fennel seeds
- 2 tsp garlic salt
- 400 g can chopped tomatoes
- 4 tbsp basil leaves, chopped
- 1 chicken stock cube
- Salt and Pepper

Preparation
Step 1
Preheat oven to 200C/400F.
Dry fry sausages in pan until lightly browned.
Place sausages in an ovenproof casserole dish with the remaining ingredients (crumble in the stock cube). Add a bit of water and stir.
Season and cook covered in the oven for 45 minutes to an hour, stirring occasionally, or until squash is tender. Serve with mashed potato and a side salad.
