Smoky Sausage One-Pot

Ingredients

  • 12 Less than 5% fat sausages
  • 198 g (7oz) green beans, cut into 1 inch pieces
  • 2 onions, thinly sliced
  • 198 g (7oz) butternut squash, peeled and cubed
  • 2 red peppers, deseeded and chopped
  • 1 tsp smoked paprika
  • 2 tsp fennel seeds
  • 2 tsp garlic salt
  • 400 g can chopped tomatoes
  • 4 tbsp basil leaves, chopped
  • 1 chicken stock cube
  • Salt and Pepper

Preparation

Step 1

Preheat oven to 200C/400F.

Dry fry sausages in pan until lightly browned.

Place sausages in an ovenproof casserole dish with the remaining ingredients (crumble in the stock cube). Add a bit of water and stir.

Season and cook covered in the oven for 45 minutes to an hour, stirring occasionally, or until squash is tender. Serve with mashed potato and a side salad.
