Basic Duck Marinade

  • 2 cups dry red wine
  • 1/2 cup soy sauce
  • 1/4 cup balsamic or red wine vinegar
  • 1/4 cup vegetable oil
  • 1 medium onion diced
  • 6 garlic cloves minced
  • 1 tablespoon freshly-cracked black pepper


Servings 1


Step 1

Combine all ingredients in a container with a tight fitting lid. Shake well and pour over game. Cover and refrigerate for 6 to 24 hours, turning occasionally. Before cooking, let game drain and pat dry with paper towels.

This recipe yields about 1 quart.
