Ingredients

  • Serves 5.
  • 1 LB Pasta
  • 1/4 cup extra virgin olive oil
  • 1 shallot, finely chopped
  • 3 scallions, sliced on a bias including green tops
  • 10 fresh basil leaves, cut into very thin strips
  • 25 - 30 Clamata Olives
  • Zest of one lemon
  • 2 tsp fresh lemon juice
  • Salt
  • Ground pepper
  • Pinch of red pepper
  • 1 can of tuna, packed in oil

Preparation

Step 1

Cook pasta according to directions on package. While the pasta is cooking, saute the shallots and scallions with olive oil in a large sauce pan for about 2 minutes. Add the basil, olives, tuna, lemon zest, and lemon juice. Then season with salt and pepper and heat thoroughly. Toss with the pasta.

Prep time 15 minutes.
