Ingredients
- 2 eggplants
- Quickie Tomato Sauce
- Fresh basil leaves
- Mozzarella (fresh is best)
- Parmesan

Preparation
Step 1
1. Cut eggplant in 3/4 inch slices
2. Lay eggplant on paper towel and sprinkle with salt. Let water come to top and flip over and salt other side.
3. Lay eggplant on baking sheet and brush with EVOO. Bake in oven for about 30 miuntes. Remove from oven.
4. Grease baking pan. Place a thin layer of sauce on bottom of dish. Layer eggplant, basil, mozzarella, generous layer of sauce, parmesan and repeat as many times as you want. Top eggplant off with sauce and generous amount of parmesan.
