Grilled Eggplant

Ingredients
- 2 small eggplants
- 1 tsp salt
- 3 tbsp olive oil
- 1/4 tsp tabasco sauce
- 1 large garlic clove, minced
- 1 tbsp balsamic vinegar
- 1 tsp fresh chopped parsley
- 1 tsp fresh or dried rosemary

Preparation
Step 1
Remove stems. Slice into 3/4 " thick pieces. Sprinkle salt evenly over eggplant and place in bowl for 20 minutes. Rinse and dry eggplant.
Stir 2 tbsp of the olive oil and tabasco sauce together. Brush evenly over both sides of the eggplant. Grill on BBQ until nicely browned.
Stir together remaining oil with garlic, vinegar, parsley, rosemary and brush over cooked eggplant. Season with salt and pepper.

Bake in oven on baking sheet at 350 degrees C. Bake 15 minutes turning once halfway through. Then broil for 1 minute per side.
