Ingredients
- 1 stick butter or
- margarine
- 1 bunch shallots, finely chopped
- 1/4 cup flour
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 12 ounces crawfish tails
- 1 tablespoon cooking sherry or white wine
- Salt and pepper to taste
- 1 teaspoon hot sauce
- 16 to 20 pastry shells, prepared according to directions

Preparation
Step 1
Melt butter or margarine over medium heat and cook chopped shallots in it for five minutes. Thoroughly blend in flour, then add both soups. Cook another five minutes, then add crawfish tails, sherry or wine, salt and pepper, and hot sauce.
Heat thoroughly, then fill pastry shells. Top with sprig of parsley for garnish and serve.
