Ingredients
- 6 oz whole wheat bowtie pasta
- 1 (6oz) bag mixed greens, such as baby kale and spinach
- 1 cup grape tomatoes, halved
- 1/2 cup chopped dried golden figs
- 4 oz log goat cheese, crumbled
- 1 Tbs olive oil
- 1 Tbs Dijon mustard
- 1 large shallot, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper

Preparation
Step 1
Cook pasta according to package directions, omitting salt. Reserve 1/2 cup of cooking water. Drain pasta and return to pot.
Place pasta over medium low heat. Add greens, stirring until wilted. Stir in tomatoes and figs. Stir in goat cheese, oil, mustard, shallot, salt and pepper, stirring until cheese is melted. Stir in pasta water a few Tbs at a time until sauce is creamy. Serve warm or at room temperature. If packing, cool completely, divide between airtight containers and refrigerate up to 3 days; serve at room temperature.
