Ingredients
- 1 tbsp olive oil
- 1/2 red onion, sliced
- 1/4 cup chopped each red, yellow and oranges peppers
- 1 tsp Moroccan Spice Blend (Recipe follows)
- 1 bag (340g) frozen, uncooked Shrimp 31/40, defrosted and peeled
- 2 gloves garlic, minced
- 1/4 cup diced roasted red pepper
- 1 tbsp lemon juice
- 1 tbsp minced parsley
- 2 tsp hot sauce or more to taste
- 6 lemon wedges

Preparation
Step 1
1. Heat oil in a large skillet over medium-high heat. Add onions and sauté until lightly softened, about 2 minutes.
2. Stir in peppers and Moroccan Spice Blend and sauté 1 minute.
3. Add shrimps and garlic; sauté until shrimps are firm and pink in color, about 2 minutes.
4. Stir in roasted red peppers and heat through. Season with lemon juice and parsley and add hot sauce to taste. Garnish with lemon wedges.
Per serving: 80 calories, 8 g protein, 3.5 g fat, 4 g carbohydrates
Moroccan Spice Blend
Makes ¼ cup
Combine in a airtight jar or resealable plastic bag:
2 tbsp ground coriander
1 tbsp paprika (hot or sweet) (I used smoky - hot)
2 tsp ground turmeric
2 tsp ground ginger
2 tsp ground cumin
1 tsp ground nutmeg
½ tsp ground cardamom
½ tsp ground cloves
