Ingredients

  • Approximately 200g Dad’s Coconut Cookie crumbs (2 cups crumbs)
  • 1/4 cup butter, melted
  • 1/2 cup butter
  • 2 squares semi-sweet chocolate
  • 1 1/2 cups icing sugar
  • 1 egg
  • Dash of salt
  • 1 tsp vanilla

Preparation

Step 1

In a food processor, process the cookies until finely chopped (crumbs). Combine the cookie crumbs and the melted butter. Spread 2/3 of this mixture in the bottom of a 9” x 9” pan. Bake at 300oF for 2 minutes. For the filling, in a microwave safe bowl, melt together the ½ cup of the butter and the semi-sweet chocolate. In a separate bowl, mix together the icing sugar, vanilla, egg and salt. Then add this to the butter-chocolate mixture. Spread on top of cookie base and sprinkle remaining 1/3 crumbs on top. Let sit in the fridge for about 24 hours before cutting into bars.
