Soba with Green Soybeans

Ingredients

  • 9 oz (250 g) soba
  • 1 pkg frozen green soybeans
  • 4 tsp sesame seeds
  • 1 tbsp toasted sesame oil
  • 1 tbsp mirin, apple juice concentrate, or clear honey
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 4 green onions, shredded

Step 1

Bring 2 saucepans of water to a boil. Cook the noodles for around 4 minutes. Add a pinch of salt to the soybean water, and cook the soybeans for about the same amount of time, or until tender.

Meanwhile, toast the sesame seeds by stirring them in a small dry saucepan for a minute or two until they smell toasted and start to jump around in the pan. Remove from the heat and pour them onto a plate so they don't burn.

Drain the noodles in a colander and rinse under cold running water. Put them in a bowl, then add the sesame oil, mirin, apple juice concentrate or honey, the vinegar, and soy sauce. Toss the noodles so they are evenly coated, then stir in the shredded green onions and toasted sesame seeds. Drain the soybeans and transfer to a bowl. Serve with the noodles.
