Apple Cake - Torta Rustica di Mele

This is the recipe of Gabriele Corcos, of Extra Virgin, on the Cooking Channel. This is the recipe of his Nonna, meaning a very old Tuscan recipe. IT IS DELICIOUS!!! and you will fall in love with this dessert. Every time I bring it to a party or bbq, it's a huge hit and there has never been any left. I get asked for this recipe every time I bring it! It's a winner
Ingredients
- 1 stick unsalted butter, melted and cooled, plus more for greasing
- 4 apples, mix of granny smith and honey crisp (or fuji), cored, peeled and cut into chunks
- 1 large lemon, zested and juiced
- 1 cup all purpose flour
- 1 tsp baking powder
- pinch kosher salt
- 2 large eggs
- 1 cup sugar, plus extra to put on apples
- 1 tsp vanilla
- Bake in a 10 inch springform pan, greased with butter

Preparation
Step 1
1. Preheat the oven to 350 degrees. Grease the 10 inch springform pan.
2. Add the apples to a large bowl and toss with the lemon juice and zest. Sprinkle enough sugar on the apples to "hit" them all. (the sugar will bring out the sweetness)
3. Whisk together the flour, baking powder and salt in a medium bowl.
4. In a separate bowl, add the eggs, sugar and vanilla, and beat together with a whisk until combined. Add the melted butter and whisk until smooth and incorporated. Add the flour to the wet ingredients in 2 additions, mixing in using a rubber spatula. The batter will be very thick. Fold in the apples, including the lemon juice and zest.
5. Pour the batter on to the prepared pan and place on a large enough sheet tray. Bake until golden and until toothpick inserted comes out clean, (don't poke an apple), approx 1 hour bake time. Let the cake cool to room temperature and set. Run a paring knife around the edges to loosen cake before removing from the pan.
