Ingredients

  • 1

    lb. boneless, skinless chicken breasts vut into ½ in. strips

  • 1

    tablespoon cajun seasoning

  • cooking spray

  • 1

    cup chopped green bell pepper

  • 1

    cup chopped red bell pepper

  • 1

    cup sliced mushrooms

  • ½

    cup sliced green onions

  • 4

    cups hot cooked linguine (about 8 oz unvcooked)

  • 2

    cups evaporated fat free milk

  • ¼

    cup grated fresh parmesan cheese

  • ½

    tsp no salt added lemon pepper seasoning

  • ½

    tsp dried basil

  • ¼

    tsp salt

  • ¼

    tsp garlic powder ¼ tsp black pepper

Directions

Combine chicken and cajun seasoning in a large zip lock bag, seal and shake to coat. Heat a large nonstick skillet coated with cooking spray over medium heat. Add chicken mixture, saute 7 minutes or until lightly browned. Add bell peppers, mushrooms and onions, cook 3 minutes. Stir in pasta and remaining ingredients, bring to a boil. Cook 1 minute, stirring constantly. Serve.
