Turkey Soup ( or Turkey Pie)

Ingredients

  • Melt 1/2 cup turkey fat
  • Add: 1/2 cup flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. nutmeg
  • Heat stirring as for a white sauce.
  • Add 1 can of evaporated milk or 8 oz. milk
  • Cook, stirring
  • Or: Make white sauce using: 2 -3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup milk
  • Add salt, pepper, nutmeg
  • Add about 3 cups broth ( can leave veges in) and 1 chicken cube
  • Cook small cubed carrots, turnip, potatoes, celery, onion
  • Add to soup.
  • Take out about 2 cups and puree in blender and return to soup.
  • Add cubed turkey ( 4-6 cups or whatever you have)

Step 1

Make broth of turkey bones. Add celery, onion, potato, carrot. Boil until meat is ready to fall off bones. Pour off broth. Cool it and skim off fat. Take turkey of boiled bones.

For pie, combine turkey, veges and sauce and put in double pie crust. Bake at 425 for 10 min. then 350 until brown.
