Ingredients

  • 1 12 lb. turkey
  • kosher salt
  • freshly ground black pepper
  • 1 large bunch fresh thyme
  • 1 lemon halved
  • 3 spanish onions
  • 1 head of garlic, halved crosswise
  • 4 Tbl melted butter
  • 1/4 to 1/2 cup olive oil
  • 8 carrots, peeled & cut in 2" chunks
  • 10 red new potatoes, quartered
  • 3 heads fennel, fronds removed, & cut in wedges through the core

Preparation

Step 1

Oven at 350 deg.
take the giblets out and wash the turkey inside & out, remove excess fat and pinfeathers, pat the outside dry
place turkey in large roasting pan. Liberally salt and pepper the inside of turkey cavity
stuff cavity with thyme, lemon, 1 onion quartered, and garlic
brush outside of turkey with butter and season again with salt and pepper
tie legs together with string and tuck wing tips under the body
peel and slice the remaining onions, toss with olive oil, scatter them around bird
roast bird for 1 hour. Toss carrots, potatoes and fennel with olive oil and add to roasting pan. Continue to roast for 1 1/2 hrs or more until juices run clear when cut between the leg and thigh
remove bird and cover with foil for 20 min. stir veggies and return to pann to oven. continue to cook while bird rests. slice turkey and serve with roasted vegetables on platter
