Ingredients
- 2 T butter
- 1 T all purpose seasoning
- 1 T paprika
- 1 1/2 t white pepper
- 1/4 c flour
- 1 1/2 c milk
- 1/4 to 1/2 c clam juice
- 1/2 to 1 T wine
- 1 1/2 t sugar
- 4 T chicken broth
- 1 lb bay scallops
- 10 oz baby shrimp
- 1/2 lb crab meat

Preparation
Step 1
For sauce, melt butter. Add seasoning, paprika and pepper. Sauté until paprika gives off a nutty odor. Add flour to make a roux. Cook 15-20 minutes. Heat milk; stir into roux. Add clam juice and bring to a simmer. Add wine, sugar, and broth. Simmer for 10 minutes. Adjust seasonings. Strain through fine sieve. Set aside.
For seafood, cook scallops in just enough water to cover. When scallops are done, add shrimp and crab just long enough to heat through. Heat sauce to just below the simmer point. Drain seafood and add to Newberg sauce. Serve over rice or toast. Serves 4-6
