Ingredients
- 1/8 tsp cayenne pepper
- 1/8 tsp. salt
- 4 skinless cneter cut salmon fillets
- 1 lemon
- 1 C. dry white wine
- 2 tsp. capers

Step 1
Sprinkle salmon with cayenne and salt. In 12 in. skillet, on med. heat, cook salmon 10 mins until knife pierces center easily; truning halfway through. Tranfer to plate. From the lemon, grate 1.2 tsp. peel onto fish; squeeze 1 Tbs. juice into a cup. To skillet add wine and capers; boil on hugh 2 mins or until liquid is reduced by half; scraping browned bits from pan. remove from heat; stir in lemon juice. Spoon sauce over fish.
