Spicy Black Bean Soup

Ingredients

  • 2 tsp olive oil
  • 1 cup each onions, red pepper, carrots, chopped
  • 1 garlic clove, minced
  • 1 jalapeno pepper, seeded and minced
  • 3 cups vegetable broth
  • 1 cup tomato sauce
  • 4 1/2 cups cooked black beans
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lemon juice
  • 1 tbsp brown sugar
  • 2 tsp oregano
  • 1 tsp each chili powder, ground cumin, worchestershire
  • 1/2 tsp thyme
  • pich black pepper

Preparation

Step 1

Heat oil in a soup pot, add onions, red pepper, carrots, garlic and jalapeno. Cook and stir for 5 minutes. Add all remaining ingredients, bring to a boil. Reduce heat to medium-low and simmer covered for 10 minutes.

Using a blender, hand mixer, or food processor, puree soup until smooth. Garnish with cilantro.
