Ingredients

  • 1 sage sausage roll (breakfast sausage)
  • 1 medium finely chopped onion
  • 2 cloves minced garlic
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 slices white bread and warm water
  • 1 pkg. frozen puff pastry, thawed
  • 1 egg yoke
  • 1 Tbl cold water

Step 1

In a large bowl combine; sausage, onion, garlic, paprika, salt, and pepper. Cut crust off of bread slices and in a separate bowl put bread and cover with warm water. Let bread stand for 5 mins. Drain off water, squeeze bread gently to extract water. Add bread to sausage mix and mix well ( bread will absorb excess fat from sausage and helps to prevent meat shrinking inside pastry while cooking). Roll each pastry sheet into an 11" X 10 1/2" rectangle. Cut each sheet into 3 1/2" long strips. Divide sausage into 4 porions; In piping bag or plastic bag with corner cut off, place 1/4 meat mixture down the center of each strip. Fold pastry over sausage and press edges together to seal. Flatten rolls slightly. Brush the rolls with the combined egg and water, Then cut each roll 1 1/2" to 2" pieces. Place seam side down on a greased or parchment paper lined cookie sheet or shallow baking sheet. Bake for 20-25 mins. or till brown.
