Salmon Cobb Salad with Light Dill Dressing

Ingredients

  • Salad:
  • 6 tbs. low-fat buttermilk
  • 4 tbs. light mayonnaise
  • 2 tbs. minced shallot
  • 1 1/2 tbs. chopped fresh dill
  • 2 tsp. fresh lemon juice
  • 1/4 tsp . salt
  • 1/4 tsp black pepper
  • 8 cups romaine lettuce leaves, torn into bite-size pieces
  • 4 hard - boiled eggs
  • 4 ounces smoked or grilled salmon, flaked into bite - size chunks
  • 1/2 avocado, diced
  • 6 strips cooked bacon, crumbled

Preparation

Step 1

In medium bowl combine dressing ingredients with a whisk. Cover and refrigerate until needed.
Place lettuce pieces in a large salad bowl. Coarsely chop eggs and sprinkle on top of lettuce. Top with salmon, avocado and bacon bits.
Drizzle dressing over top and toss salad to blend well.
