Ingredients
- 2 10 oz. pkgs. Lunds & Byerlys Chicken Noodle Soup, thawed
- 8 oz. Italian sausage
- 1 T. olive oil
- 1 c. cubed zucchini
- 2 t. minced garlic
- 14.5 oz. can diced tomatoes, drained
- 10 oz. can cannellini beans, rinsed, drained
- 1/4 t. crushed red pepper
- 2 T. minced fresh basil
- 4 T. freshly grated Parmesan cheese

Step 1
Cut soup pouch open; transfer soup to a bowl and set aside.
Form sausage into 12 mini-meatballs.
Heat oil in skillet over medium-high heat.
Brown meatballs 4-5 minutes, transfer to plate.
Saute zucchini and garlic in skillet 2-3 minutes.
Stir in tomatoes, soup, beans, crushed red pepper and meatballs.
Reduce heat to medium and simmer 10 minutes.
Stir in basil and Parmesan cheese.
