I made up this delicious and simple recipe myself
- 1 package sweet Italian Sausage (3-4_
- 1 Bay leaf
- 1 Tbsp minced or chopped garlic (we use 2!)
- 2 cans chicken broth (3.5 c plus 4 bullion cubes)
- 12 oz shell or other fancy pasta (3 cups)
- 1/2 tsp onion powder
- 1/2 Tbsp Italian seasoning
- 1 tsp salt
Pork Paillards with Sour Cream-Paprika Sauce

From Martha Stewart Pork tenderloin makes excellent paillards
- 16 pork paillards
- Salt and pepper
- 2 tablespoons grapeseed oil or safflower oil
- 1/4 cup dry white wine
- 1/2 cup low-sodium chicken stock
- 1/3 cup sour cream (or more to thicken)
- 1/4 teaspoon sweet or smoked paprika
Confetti Chicken Salad

Chocolate Blancmange

Oatmeal Apple Crisp

Preheat oven to 350 degrees
- 8 cups Macintosh Apples or other baking apples.
- APPLE SPICES
- 1/2 cup Sugar
- 2 tbsp. Flour
- 1/4 tsp. Salt
- 1 tsp. Cinnamon
- 1 tsp. Nutmeg
- OR: 2 cans of apple filling
- OATMEAL TOPPING
- 1 cup Oats
- 1 cup Brown Sugar
- 1 cup Flour
- 1/4 tsp. Baking Soda
- 1/3 tsp. Baking Powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 cup butter, melted (or cut in)
Judy's Chili Soup

1. Brown hamburger and onion in skillet
- 1 Ib. ground beef
- 1 onion, chopped
- 103/4-oz. can condensed tomato soup
- 16-oz. can kidney beans, drained
- 1 qt, tomato juice
- 1/8 tsp. garlic powder
- 1 tbsp chili powder
- 1/2 tsp. pepper
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
Calico Ham and Bean Soup

1. Combine bean and 6 cups water in a large saucepan
- 1 Ib. dry bean mix, rinsed and drained with stones removed
- 6 cups water
- 2 cups cubed, cooked ham
- 1 cup chopped onions
- 1 cup chopped carrots
- 1 tsp. dried basil
- 1 tsp, dried oregano
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 2 bay leaves
- 1 tsp. liquid smoke (optional)
Smashed Potato Salads

In pot place scrubbed and chopped potatoes in water
- 2 lb. red potatoes
- 2 tsp salt
- 3 hard boiled eggs
- 1 tsp minced garlic
- 3/4 cup mayo
- 1/4 cup Dijon
- 2 Tbsp. lemon juice
- 1 Tbsp. brown sugar
- 1/2 tsp hot sauce
- 1/2 tsp worcestershire
No-Knead Bread

Adapted from Jim Lahey, Sullivan Street Bakery Time: About 1 1/2 hours plus 14 to 20 rising
- 3 cups all-purpose or bread flour, more for dusting
- 1/4 teaspoon instant yeast
- 1 1/4 teaspoons salt
- Corn meal or wheat bran as needed
Quick and Easy Nacho Dip

- 15-oz. can refried beans
- 1 1/2 cups sour cream
- 3 cups shredded cheddar cheese, divided
