Greek Turkey Burgers

- 1 1/3 pounds ground turkey breast
- 1 (4-oz.) package crumbled feta cheese
- 1/4 cup finely chopped red onion
- 1 teaspoon dried oregano
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- Vegetable cooking spray
- 1/2 cup grated English cucumber
- 1 (6-oz.) container fat-free Greek yogurt
- 1 tablespoon chopped fresh mint
- 1/2 teaspoon salt
- 4 French hamburger buns, split and toasted
- Toppings: lettuce leaves, tomato slices, thinly sliced cucumber
- Garnish: pepperoncini salad peppers
Kale, Cabbage and Ramen Salad

This salad is similar to Oriental Chicken Salad, but is vegetarian and a little lighter on the oil
- Dressing:
- 2 packages seasoning mix from Ramen noodles
- 1/4 c olive oil
- 1/4 c sugar
- 1/3 c vinegar (I use Bragg's apple cider vinegar)
- 1 tsp Mrs. Dash
- 1 tsp garlic powder
- Salad:
- 1 small handful kale (see directions)
- 1 small bag cole slaw mix or half a head of cabbage of choice
- 2 package Ramen noodles
- 1/4 c toasted almonds or cashews
- 1 small can mandarin oranges, not drained
Cold Nectarine Dessert Soup

Vitamix Recipe
- 4 nectarines or peaches, halved, pitted
- 1/2 cup 100% white grape juice, cold
- 1 tablespoon honey or other sweetener, to taste
- 1/2 lemon, peeled
- dash cinnamon
Leek and Lentil Soup

This soup smells so awesome when it is cooking! Even picky eaters are bound to become chowhounds
- 3 Tbsp oil
- 2-3 leeks (white plus some of the green), chopped
- 1 medium onion, chopped
- 3 cloves garlic minced
- 1 c dried green or brown lentils
- 1/4 c barley
- 7 c chicken stock (or 7 c hot water and 7 tsp chicken bullion)
- 2-3 carrots, chopped
- 2 stalks celery, chopped
- 1 can tomatoes (19 oz) OPTIONAL
- 2 bay leaves
- 1 tsp dried thyme
- 1/4 c chopped parsley
- salt and pepper
- red pepper or Slap Ya Mamma, to taste
Wilton Royal Icing

This is Wilton's recipe, used for icing cookies or making decorations on cakes
- 3 Tbsp Wilton Meringue Powder
- 1 lb. confectioner's sugar (4c)
- 6 Tbsp water (or 5 for really stiff icing)
Easy Banana Bread

Here is a really nice banana bread recipe
- 2 eggs beaten
- 1/3 c buttermilk (you can use 1 cup milk and 1 tsp lemon juice)
- 1/2 c applesauce and oil (2 Tbsp oil and the rest applesauce)
- 1 c mashed bananas (3 bananas)
- 1 tsp vanilla
- 3/4 c white sugar
- 1/2 c brown sugar
- 1 tsp cinnamon
- 1 3/4 c all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 c chopped nuts (optional)
- 1/2 c chocolate chips (optional)
Bowties with Smoked Almond Sauce

- 1 pound bowtie pasta
- 1/3 About 1/3 cup extra-virgin olive oil
- 12 slices good-quality smoky bacon, cut into 1/2-nch pieces
- 1 bunch flat-leaf parsley, trimmed (about 2 cups loosely packed)
- A couple of generous handfuls grated parmigiano-reggiano cheese
- 3 to 4 tablespoons smoked almonds (a generous handful) 1 clove garlic, grated
- 1 pint cherry tomatoes or multicolored baby heirloom

We love this recipe! It is warm and filling! Absolutely YUMMY! One of our favorites
- 3-4 c cooked chicken
- 1/2 c chopped onion
- 3 Tbsp flour
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 2 c chicken broth (or 2 c water, 2 chicken bullion)
- 2 c hot water
- 2 c fat free half and half
- 2 c Monterey Jack Cheese
- 1 16 oz can cream corn
- 1 16 oz can whole kernel corn
- 1 4 oz can green chili
- salt and pepper
Carrot Ginger Tofu Soup

- 1/4 small onion, peeled
- 4 small garlic cloves, peeled
- 2 tablespoons oil
- 1/2 teaspoon salt
- pinch white pepper
- 1 tablespoon chopped fresh ginger

- 2 cups low sodium vegetable or chicken stock

- 1 (16 ounce) cans peach slices, drained and reserve juice
- 2 1/2 lbs skinless chicken pieces
- 1 tablespoon vegetable oil
- 1/4 cup frozen orange juice concentrate, thawed
- 1/4 cup malt vinegar
- 1 tablespoon brown sugar
- 1 teaspoon dried basil leaves
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
