Brown meat. Cook potatoes and mash, adding butter, salt and pepper
- 1 lb hamburger
- 2 lb potatoes
- 2 Tbsp butter
- 1/2 c milk
- salt and pepper to taste
- 2 cans creamed corn
Tortilla Soup

From VitaMix
- Soup Base:
- 3 cups low sodium chicken, beef, or vegetable stock
- 1 Roma tomato, halved
- 1 carrot, halved
- 1 rib celery, halved
- 1 thin slice of onion, peeled
- 1 garlic clove, peeled
- 1 thin slice of yellow squash
- 1 thin slice of red bell pepper
- 1 thin slice of cabbage
- 1 mushroom
- 1 teaspoon taco seasoning
- dash cumin
- salt and pepper, to taste
- Add to soup base on Variable 2:
- 1/2 cup cooked chicken
- 1/2 fresh jalapeño
- 1/4 cup pitted black olives
- 1/4 cup drained canned corn, unsalted
- 2 ounces tortilla chips
Spring Rolls

Very nice
- 1/2 cooked shrimp, chopped (optional)
- 1/2 c shredded pork
- 1/3 c shredded cabbage
- 1/4 c bean sprouts
- 1/3 c shredded carrots
- 2 Tbsp soy sauce
- 1 tsp sugar
- dash of red pepper
- 2 Tbsp rice wine vinegar
- 1 package spring roll wrappers
- 2 Tbsp cornstarch
- 2 Tbsp cold water
Kiwi Pear Smoothie

If you don't eat kiwi, you are missing out! Potassium, vitamin C, and fiber all in one little package
- 8 oz plain yogurt
- 1 pear, peeled and diced (or just cut up for Vitamix)
- 1 banana, peeled and chunked
- 1/4 c honey
- 1 c ice cubes
- 6 kiwifruit
Garden Pasta Salad

A nice Italian style pasta salad
- Dressing:
- Prepared Italian dressing in a cruet
- 1/2 Tbsp parsley
- 1/2 c mayonnaise
- 1 Tbsp dijon mustard
- 1 tsp oregano
- 2 Tbsp sugar
- Salad:
- 16 oz rotini or bow-tie pasta
- 3 c cooked chicken
- 1 can kidney beans, drained and rinsed
- 1 small bag broccoli florets, cooked
- 1/2 red bell pepper, chopped
- cherry tomatoes
Onion Soup Mix (Make A Mix)

- 4 tsp beef bullion granules, or 4 crushed cubes
- 8 tsp dried minced onion
- 1 tsp onion powder
- 1/8 tsp celery salt
Minty Breath Biscuits

- 1 1/2 cups whole wheat flour
- 1 1/2 cups Bisquick® baking mix
- 1/2 cup mint leaves -- loosely packed
- 1/4 cup milk
- 4 tablespoons margarine
- 1 egg
- 1 1/2 tablespoons maple syrup -- or corn syrup, honey
No-Bake Cookies

These are really great, easy to make cookies
- 1/2 cup unsalted butter
- 1/2 cup cocoa
- 2 cups sugar
- 1/2 cup milk
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick cooking oats
Cauliflower Soup (crock)

Place 2 cups hot water in crock on high
- 1 head cauliflower
- 2 c hot water
- 8 oz cream cheese, cubed
- .25 lb dried beef
- 1/2 c potato flakes or buds
Italian Mac
