Grandma Frays’ Macaroni & Cheese

- 4 c. dry elbow macaroni (boil and cook 7 minutes)
- 2 c. shredded mild cheddar cheese (divided)
- 2 c. shredded sharp cheddar cheese (divided)
- 1 c. shredded mozzarella cheese
- 1/2 c. shredded colby jack cheese
- 1/2 tube butter crackers (crushed) — those Keebler rectangular ones are the best!
- 1 can evaporated milk
- 1/2 – 1 can reg. milk (use the evap. milk can to measure)
Black Beans and Rice

This is another favorite at our house
- 3-5 Sweet sausages, or 1 lb bulk sausage
- 2 c brown rice
- 1 can Ro-Tel tomatoes
- 1 tsp minced garlic
- 1 tsp salt
- 1/4 tsp coriander
- 3 Tbsp sugar
- 1/2 tsp cumin
- 1 can black beans
Baked Oatmeal

Preheat oven to 350° F. Combine all ingredients in mixing bowl and mix well
- 3 cups quick cooking oats
- ¾ cup sugar
- 1 cup milk
- ⅓ cup melted butter
- 2 eggs
- 2 tsp baking powder
- ¾ tsp salt
- 1 tsp vanilla extract
Broccoli Cheese Soup

Vitamix Recipe
- 1 cup skim or lowfat milk, steaming
- 1/3 cup shredded lowfat cheddar cheese
- 2 cups broccoli or cauliflower, steamed
- reserve 1 cup for serving
- 1/4 cup onion
- 1 teaspoon cornstarch
- 1/4 teaspoon chicken or vegetable bouillon or soup base
Tortilla Veggie Casserole

Preheat oven to 350. Spray a 9x9 pan with vegetable spray
- 2 Tbsp vegetable oil
- 3 c chopped zucchini
- 1 c chopped onion
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can ranch style beans
- 1 can Ro-Tel tomatoes
- 1 package taco seasoning mix
- 2 c shredded cheddar
- 8 oz cream cheese, softened
- 1/2 c sour cream
- 12 small corn tortillas
Chicken and Broccoli Salad

- 1 cup mayonnaise
- 3 tablespoons sugar
- 2 tablespoons cider vinegar
- 4 cups chopped cooked chicken

- 12 hamburger buns
Braised Red Cabbage

- 1/2 large red onion, julienned
- 1/2 cup red-wine vinegar, or cider vinegar
