Baked Potato Twice Baked Potatoes

- 4 small Baking potatoes (5-6 oz ea)
- 2 oz reduced-calorie cream cheese
- (cubed and softened)
- 2 Tbsp snipped chives
- 1/4 tsp dried basil, crushed
- 1/8 tsp salt
- 3 to 4 tbsp skim milk
- pinch of paprika (to taste)
- dash of pepper

- 1/2 Cup Onion, Chopped
- 8 Cups Chicken Broth
- 6 Corn Tortillas
- Lime Juice
Chicken with Shiitake Mushroom Sauce

- 1 Cup Nonfat Cottage Cheese
- 1/2 Cup Evaporated Skim Milk
- 1/4 Cup Nonfat Cream Cheese
- 1/2 Cup Onion, Finely Chopped
- 1/2 Cup Sun-Dried Tomatoes, Sliced
- 1/2 Cup Dry White Wine
- 1 Tsp Garlic, Finely Chopped
- 2 Cup Mushroom, Sliced
- 1 Cup Shiitake Mushrooms, Sliced
- 1 1/2 Cup Chicken Broth, Low Sodium
- 2 Tbsp Soy Sauce, Low Sodium
- 1 Tsp Lemon Juice
- 1/4 Tsp Dried Thyme
- 4 Chicken Breast Halves, Boned & Skinned
- 1 Tsp Cornstarch (Dissolved In)
- 1 Tbsp Water
- 1 Tbsp Basil, Finely Chopped
Marmalade - Orange/Mandarin Oranges

This one I came up with myself from the standard way to make marmalade
- 8 Oranges ( I have a tree- so I use 4 Naval and 4 Valencia)
- 16 Mandarin oranges
- 1 lemon
- 2 1/2 cups Sugar ( I use splenda & honey, 1 1/4 cup of each.)
- 2 cups of water ( If the oranges are very juicy, if not add more water)
- This is a large batch - so I recommend making this into 2 batches.

- 1/3 Jar Salsa (12 Oz)
Meatloaf, Not-Your-Mamas Meatloaf

- 1 Tbsp olive oil
- 1 Cup onions, chopped
- 1 Tbsp red curry base*
- 2 Tbsp water
- 1/2 Cup zucchini, shredded
- 1 Carton plain low-fat yogurt (8 oz)
- 1 Tbsp onion, finely chopped
- 1/2 Tsp salt
- 1/2 Tsp sugar
- 1 1/2 Lb ground turkey
- 1 Cup zucchini, shredded
- 1 Cup bread crumbs (3 slices white Bread)
