1. Place oven racks in center of oven
- 1/2 cup brown rice flour
- 1/4 cup tapioca starch/flour
- 1/4 cup coconut flour
- 1/4 quinoa flour
- 1/4 cup millet flour
- 1/2 cup unsweetened cocoa
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon guar gum or xanthan gum
- 2 teaspoons instant coffee granules (decaffeinated is fine)
- 1/2 teaspoon salt
- 3 teaspoons egg replacer powder + 4 tablespoons water
- 1/2 cup vegetable palm shortening (or 1/4 cup butter + 1/4 cup vegetable shortening)
- 1/2 cup brown sugar
- 1 1/2 teaspoons pure vanilla extract
- 1 cup coconut milk or milk of choice
- 2 tablespoons pure maple syrup or agave syrup
- Whoopie Pie Filling
- If filling is too thick, add additional coconut milk, 1 teaspoon at a time, until desired consistency is reached. If too thin, add more sugar.
