- 1 large egg
- 1 large egg white
- 1/2 cup nonfat buttermilk (see Tip)
- 1 teaspoon freshly grated lemon zest
- 1 tablespoon lemon juice
- 2 teaspoons canola oil, divided
- 3/4 cup fresh or frozen (not thawed) blueberries

- 1 small onion, shredded
- 3 large potatoes, peeled, shredded
- 3 tablespoons all-purpose flour
- 1/4 cup olive oil, for frying
- 1 1/4 cups gouda cheese, shredded
- DENVER option
- Use Cheddar cheese, and also include
- 1/4 Cup finely diced Bell pepper
- 1/4 Cup finely diced Ham
- And garnish with Chives and sour cream
