Heat oil on low heat. Add garlic and cook until golden
- 1 lb. penne pasta
- 4 oz. olive oil
- 3 cloves garlic
- 4 oz sliced mushrooms
- 1 ripe tomato seeded and chopped
- 1/2 lb. asparagus cut into bite size pieces (I precook the asparagus just until tender)
- 1 tsp. butter
- 1 tsp. parsley
- Salt & pepper
- 1 pint heavy cream
- 4 oz. parmesan cheese
Cheesy Spinach and Artichoke Dip

Heat oven to 350 F. Mix all ingredients; spoon into 9-in quiche dish or pie plate
- 1 can (14 oz) artichoke hearts, drained, finely chopped
- 1 pkg (10 oz) frozen, chopped spinach, thawed, drained
- 3/4 c. Grated Parmesan
- 3/4 c. Light Mayo
- 1/2 c. 2% milk shredded mozzarella cheese
- 1/2 tsp garlic powder

- Brownies- 1/2 cup (1 stick) unsalted butter
- 2 ounces unsweetened chocolate, chopped
- 2 large eggs
- 1 cup sugar
- 1/2 cup all purpose flour
- 1/2 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- pinch of salt
- Topping- 1 cup sifted powdered sugar
- 4 tablespoons (1/2 stick) unsalted butter, room temperature
- 1 teaspoon whole milk
- 1/4 teaspoon peppermint extract
- 4 ounces semisweet chocolate, chopped

Heat oven to 400 F. Spray rectangular baking dish, 13x9x2, w/cooking spray
- 1 tbls vegetable oil
- 2 c. broccoli flowerets
- 2 c. sliced mushrooms
- 1 med. red onion, sliced
- 1 med. carrot, shredded (2/3 c.)
- 1 med. zucchini, shredded (2 c.)
- 1 clove garlic, finely chopped
- 1 c. green salsa
- 8 flour tortillas (8-10 in)
- 3 c. shredded Wisconsin Monterey Jack or Mexican cheese blend (12 oz)
- Green or red salsa, if desired

- 1/2 c. shortening
- 3/4 c. Reese's Creamy Peanut Butter
- 1/3 c. granulated sugar

- 2 tbls milk
- 1 tsp vanilla extract

- 3/4 c. white vinegar

Combine soy sauce, sugar, garlic, lime juice, ginger and red pepper in wide, shallow baking pan that will hold fish...
- 1/4 c. soy sauce
- 2 tbls sugar
- 3 lg cloves garlic, @ 1 tlbs minced
- Juice of 1 lime (2 tbls or so)
- 1 tsp (or so) minced or grated fresh ginger
- 1/4 tsp crushed red pepper, or 1/2 minced Serrano chili
- 1 lb tilapia fillets (or other thin, mild fish)

Heat oven to 350. Cook broccoli according to pkg directions and drain
- 2 pkgs (10 oz size) frozen broccoli spears
- 1/2 c. butter
- 6 tbls flour
- 2 c. chicken broth
- 1/2 c. heavy cream
- 6 chicken breast halves, deboned and browned in melted butter
- 1/2 c. Mozzarella cheese, grated
- 3 tbls white wine
- 1/2 tsp salt
- 1 dash pepper
