Ingredients

  • 1

    lb. penne pasta

  • 4

    oz. olive oil

  • 3

    cloves garlic

  • 4

    oz sliced mushrooms

  • 1

    ripe tomato seeded and chopped

  • 1/2

    lb. asparagus cut into bite size pieces (I precook the asparagus just until tender)

  • 1

    tsp. butter

  • 1

    tsp. parsley

  • Salt & pepper

  • 1

    pint heavy cream

  • 4

    oz. parmesan cheese

Directions

Heat oil on low heat. Add garlic and cook until golden. Add mushrooms and cook about 3 minutes until tender. Add tomato and asparagus and cook another 3 minutes. Add butter, parsley, salt & pepper and heavy cream. Simmer until heated through. Remove from heat and stir in cheese. Toss with cooked pasta. Enjoy!
