- 8 oz. sliced mushrooms (canned works well)
- hot, cooked rice optional (preferably chicken-flavored)

- 1 cup cold water
- 1/3 cup pureed tomatoes sift together
- 2 1/2 cups cake flour
- 1/2 cup dry cocoa
- 1 1/2 teaspoons baking soda
- 1 cup shortening
- 1 3/4 cup sugar
- 1 tespoons vanilla
- 3 eggs, separated
- Stawberries

Spinach Tart

- 9 -in tart pan, lined with pie dough
- 9 oz baby spinach
- 4 tbsp butter
- 1 onion, finely chopped
- 2 heaping cups grated cheddar cheese
- 2 whole eggs, plus 2 yolks
- 2/3 c. heavy cream
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper
Beach Street Cajun Shrimp

Combine first 7 ingredients in a 9 x 13 baking dish
- 1/2 c. olive oil
- 1 clove garlic, whole
- 2 tbs cajun seasoning
- 2 tbs lemon juice
- 2 tbs minced parsley
- 1 tbs brown sugar
- 1 tbs soy sauce
- 16 extra lg shrimp
Chicken Quesadillas

Heat 2 teaspoons oil in 10-inch skillet over medium-high heat
- 2 tsp Olive Oil
- 1 lb. boneless chicken
- 1/4 tsp cumin
- 8 10 in. tortillas
- 1/4 c. chopped, fresh cilantro
- 2 tbl veg oil
- 1 c. shredded Monterey Jack cheese
- 1 c. (4.5 oz) chopped green chilis, drained
- Optional: 1/4-1/3 c. chopped yellow onion; 1-2 chopped jalapenos

- 4 avocados, peeled, pitted, halved
- 1/2 c. chopped cilantro
- 2 tbls fresh lime juice

- 13 Graham crackers
- 1 bag (8 oz) toffee bits
- 1 1/2 c. coarsely chopped toasted natural almonds
- 1/2 c. sugar
- 1 c. (2 sticks) unsalted butter
- 3/4 c. (4 oz) bittersweet chocolate, chopped, or chocolate chips

- 1/3 c. extra-virgin olive oil
- 20 ripe plum tomatoes, peeled, halved and seeded
- Pinch of crushed red pepper
- Kosher salt and freshly ground black pepper

- 1 oz. freshly grated Parmigiano-Reggiano (@ 1/2 c.)
- 6-8 fresh basil leaves, sliced

- 1/2 c. scallions, chopped fine
- 1/2 c. raisins or craisins
- 1 julienned carrot, for color
- 1/4 c. olive oil
- 1/2 c. white wine vinegar
- 1 1/2 tbls Dijon mustard
- 2 cloves garlic, chopped
- 1 1/2 tsp salt
