Bacalaítos - Fried Codfish Fritters

Cod Fritters The Puerto Rican Way Bacalaítos are an immensely popular staple in Puerto Rico
- 1 lb. GOYA® Boned Salted Codfish (Bacalao)
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper
- 2 cups water
- 1 tsp. GOYA® Minced Garlic or 2 cloves fresh garlic, minced
- 2 tsp. fresh cilantro, minced
- GOYA® Vegetable Oil, for frying
Peaches & Cream Cheesecake

Blend together flour, salt, milk, egg, baking powder, pudding mix and butter; beat for 2 minutes

1. Combine milk and 2 cups sweetened coconut in a 3 1/2-quart saucepan
- 2 cups milk
- 2 cups sweetened shredded coconut
- 1 vanilla bean
- 2 large eggs
- 3/4 cup plus 2 tablespoons sugar, divided
- 3 tablespoons all-purpose flour
- 1/4 cup cold unsalted butter, cut into pieces
- 1 (9-inch) baked Coconut Piecrust
- 1 1/2 cups whipping cream, chilled
- 1/2 teaspoon vanilla extract
- 1 1/2 cups unsweetened coconut "chips" (large-shred coconut) or 1 cup sweetened shredded coconut
- Garnish: 1 (4- to 6-ounce) bar white chocolate, shave

Southern Pork Barbecue

- Coleslaw:
- 3-lb. boneless pork loin roast, trimmed
- 1 c. water
- 18-oz. bottle barbecue sauce
- 2 T. Worcestershire sauce
- 1 to 2 T. hot pepper sauce
- 1/4 c. brown sugar, packed
- 1 t. salt
- 1 t. pepper
- 16 to 20 mini hamburger buns, split
- 1 head cabbage, shredded
- 3 carrots, peeled and shredded

- 2 bay leaves
- 1/2 cup wine vinegar
- 10 whole peppercorns
- 3 tablespoons oil
- 3 pounds chicken or pork, cut up
- Salt and pepper to taste
- 1/2 cup white wine or beer
- 1 clove garlic, minced

Coarsely crumble ground beef in 3-quart casserole
- 1 pound ground beef
- 2 medium onions, chopped
- 1/4 teaspoon instant minced garlic
- 1 can (16 to 20 ounces) pinto or red kidney beans
- 1 can (14 1/2 to 16 ounces) stewed tomatoes, chopped
- 1 can (15 ounces) tomato sauce
- 1 teaspoon salt
- 6 tablespoons chili powder

- 1 can (14.75 oz) Green Giant® cream-style corn, undrained
- 1 teaspoon chili powder
- 1/2 cup shredded Mexican cheese blend or Cheddar cheese (2 oz)
