- 1 ( 8″) Cake layers
- 1 cup Cake Boss vanilla custard

Heat oven to 325. Prepare cake pans with your favored method
- 4 Cups Cake Flour
- 2 Cups Granulated Sugar
- 1 Cup Brown Sugar (packed)
- 1 Tablespoon Baking Soda (equiv. of 3 Teaspoons)
- 1 1/2 Teaspoons Salt
- 2 1/2 Cups Buttermilk
- 1 Cup Butter – softened (2 sticks)
- 4 Eggs
- 4 ozs. Melted Unsweetened Chocolate (Cool) or 1/2 Cup Cocoa Powder
- 2 Teaspoons Vanilla

Dissolve coffee in boiling water; set aside
- 4 teaspoons instant coffee granules
- 1 tablespoon boiling water
- 1-1/2 cups cold fat-free milk
- 1 package (1.4 ounces) sugar-free instant chocolate pudding mix
- 1/2 teaspoon ground cinnamon
- 1 cup reduced-fat whipped topping
- Additional whipped topping and chocolate wafer crumbs, optional

MIX together coconut, gelatin, almonds, milk, sugar and extract
- 1 3/4 cups FLAKE Coconut, finely chopped
- 1 package (4-serving size) JELL-O Brand Gelatin, any flavor

- 1 1/2 teaspoons sugar

- 1 (12 oz.) Chicken Breast, shredded (I use rotisserie chicken and shredded with a fork)
- 1 (8.75 oz.) can NO SALT added Corn, drained
- 8 oz. reduced-fat Sour Cream
- 11/2 c. (6 oz.) shredded Mexican Cheese Blend
- 2 Tbs. chopped, fresh Cilantro (optional)
- 10 (6 in.) Corn Tortillas
- 10 oz. Enchilada Sauce
- 1 c. Salsa
