Crunchy Peruvian Fish – Chicharrón de Pescado

1 Cut tilapia fillets into 1½” pieces; transfer to non-aluminum container
- 6 boneless, skinless tilapia filets, about 1 lb.
- 1 tbsp. Lemon Juice
- 1 tbsp. Minced Garlic
- 2 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper, divided
- 1 tsp. Yellow Hot Pepper Paste – Aji Amarillo
- Corn Oil, Canola Oil or Vegetable Oil, for frying
- ½ cup all-purpose flour
- ½ cup cornstarch

- 1 lime, cut into wedges
Easy Hawaiian Wedding Cake

Bake cake mix according to package directions in a 9x13 pan
- 1 yellow cake mix
- 1 15 oz can crushed pineapple, not drained
- 1 8 oz cream cheese, softened
- 1 3 oz instant vanilla pudding mix
- 2 cups milk (2% or whole)
- 1 12 oz whipped topping
- 1 cup sweetened coconut flakes
Stir-Fried Chicken with Chinese Garlic Sauce

1. In a large bowl, toss chicken strips with toasted sesame oil and white pepper
- For the sauce:
- 1 pound chicken breast tenders – cut crosswise into 1/2-inch-thin strips
- 1 tsp toasted sesame oil
- 1/4 tsp Season with Spice’s finely ground white pepper
- 2 tbsp peanut oil or vegetable oil
- 5-6 garlic cloves – minced
- 1 tbsp freshly grated ginger
- 1 tsp Season with Spice’s red chili flakes
- 1/2 cup roughly chopped red onion
- A handful of snow peas - trimmed
- 1/2 red bell pepper – cut into thin strips
- 1 tbsp freshly squeezed lemon juice
- 1 tablespoon rice vinegar
- 1 1/2 tablespoon low sodium soy sauce
- 1 tablespoon dark soy sauce
- 2 teaspoons Chinese rice wine, or dry sherry (optional)
- 1/2 tablespoon brown sugar

Super Simple Chicken Pizzaiolo

1. Preheat the oven to 450ºF
- 1 (14-ounce) jar marinara sauce (or 1 1/2 cups)
- 4 boneless, skinless chicken breasts (about 1 pound)

- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded reduced-fat Italian blend cheese
