Puerto Rican Style Chicken & Rice

Preheat your oven to 350 degrees
- Large Size Reynolds Oven Bag
- 2 lbs. Chicken Thighs with bone and skin
- 1.5 lbs Chicken Drumsticks with skin
- Goya Adobo seasoning (for chicken)
- 1 lb. seasoned yellow rice, uncooked ( I use Vigo Low Sodium Saffron Yellow Rice)
- 1 packet Goya Sazón seasoning
- 1/2 large onion, finely chopped
- 1/2 red pepper, finely chopped
- 2 large cloves of garlic, minced
- 2 (15 oz.) cans Green Pigeon Peas, drained and rinsed
- 1 (15 oz.) can tomato sauce
- 4 cups low sodium chicken broth (if you want lower the salt content, you can substitute 2 cups of broth for water)
- 1/4 cup canola oil
Strawberry & Chocolate Tart with Walnut Crust

For crust: Combine flour, sugar and salt in processor and mix
- Crust:
- 1 c flour
- 3 tbs sugar
- 1/4 tsp salt
- 1/3 c walnuts
- 1/2 c chilled unsalted butter, cut into 1/2 pieces
- 2 egg yolks
- 1/3 c strawberry jam
- Filling:
- 3/4 c plus 2 tbs whipping cream
- 6 oz bittersweet or semisweet chocolate, chopped
- 2 (1 pint) baskets strawberries
Maggie's Kickin' King Ranch Chicken

In large bowl, combine chicken and remaining ingredients except chips and cheese; mix well
- 5 to 6 boneless, skinless chicken breasts, cooked and cubed
- 2 10-3/4 oz. cans cream of chicken soup
- 2 10-3/4 oz. cans cream of mushroom soup
- 2 10-oz. cans diced tomatoes with green chiles
- 1 tbsp. chili powder
- 2 tsp. garlic salt
- 1-1/3 c. water
- Salt and pepper to taste
- 2 18-oz. pkgs. restaurant-style tortilla chips, divided
- 2 12-oz. pkgs. shredded Cheddar cheese
Prosciutto Pinwheels

Unfold puff pastry. Spread mustard over pastry to within 1/2 in
- 1 sheet frozen puff pastry, thawed
- 1/4 cup sweet hot mustard
- 1/4 pound sliced prosciutto or deli ham, chopped
- 1/2 cup shredded Parmesan cheese

Position a rack in upper third of oven and preheat to 425 degrees
- 1 1/2 tablespoons unsalted butter, cut into pieces, plus more for brushing
- 1/2 clove garlic
- 1/3 cup shredded mozzarella cheese
- 1/3 cup shredded asiago cheese
- 1/3 cup shredded raclette or comte cheese
- 2 pounds russet potatoes, peeled and sliced 1/8 inch thick

- 4 whole garlic bulbs
- 2 tablespoons olive oil, divided
- 1 package (9 ounces) fresh baby spinach
- 3/4 teaspoon salt, divided
- 1/2 teaspoon coarsely ground pepper, divided
- 6 boneless skinless chicken breast halves (6 ounces each)
- 6 tablespoons butter, cubed
- 6 tablespoons all-purpose flour
