Apple Spice Custard Cake

Stir apples into cake batter and bake according to package instructions for a 9x13-inch cake
- 2 medium-sized apples, peeled, cored, and finely chopped (about 2 cups) (see Note)
- 1 (18.25-ounce) package spice cake mix, batter prepared according to the package directions
- 1 (14-ounce) can sweetened condensed milk
- 1 cup sour cream, at room temperature
- 1/4 cup lemon juice
- Ground cinnamon for garnish
Cajun Beans and Rice with Smoked Sausage

In large skillet, heat oil over medium-high heat
- 1 Tbsp. vegetable oil
- 1/2 each medium green, red, and yellow bell peppers cut in 1-inch chunks
- 1 medium onion cut in 1-inch chunks
- 1 can (14.5 ounces) diced tomatoes, drained
- 2-3 tsp. Cajun seasoning
- 1 can (30 ounces) Brooks Mild Chili Beans in Chili Sauce
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. ring smoked turkey sausage, cut into 1-inch slices
- 3 cups hot cooked white rice
- Hot sauce to pass

In a small bowl, combine wafer crumbs and sugar; stir in butter
- FILLING:
- 1-1/4 cups chocolate wafer crumbs
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1/2 cup butter
- 6 ounces semisweet chocolate, chopped
- 3 eggs
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2/3 cup all-purpose flour
- TOPPING:

Stir Fried Chinese Scallops

- 1 1/4 pounds scallops

- 1/4 cup water

Easy Homemade Caramel Corn

Chipotle Bacon Mac and Cheese

- 1 box (7 oz) Betty Crocker® mac & cheese original
- Margarine and milk called for on mac & cheese box
- 3 slices bacon, crisply cooked, crumbled
- 1/2 to 1 chipotle chile in adobo sauce (from 7-oz can), finely chopped (1 teaspoon)
- 1 teaspoon adobo sauce
Honey Ginger Chicken Kebabs

- 1/3 cup hoisin sauce
- 1/3 cup honey
- 1/2 teaspoon minced fresh ginger or 1/8 teaspoon ground ginger

- 1 red bell pepper, seeded and cut into 12 pieces

- 3 medium potatoes, sliced 1/4 inch thick
- 2 large onions, sliced 1/4 inch thick
- 1 teaspoon basil
- 1 pound ground beef, crumbled, cooked and browned
- 1 tablespoon cumin
- 1 can green beans
- 1 can cream of mushroom or chicken soup
- Garlic salt, to taste
- Cheese, grated or sliced
- pepper to taste
