Ruthie’s Crispy Chocolate Chip Cookies

Beat margarine, oil, sugars and egg until light and fluffy
- 1 c. margarine
- 1 c. oil
- 1 c. brown sugar, packed
- 1 c. sugar
- 1 egg, beaten
- 1 t. coconut extract
- 1 t. butter flavoring
- 2 t. vanilla extract
- 3-1/2 c. all-purpose flour
- 1 t. cream of tartar
- 1/2 t. salt
- 1 t. baking soda
- 1 c. quick-cooking oats, uncooked
- 1 c. crispy rice cereal
- 1 c. sweetened flaked coconut
- 1 c. semi-sweet chocolate chips
Coconut-Cream Chocolate Pie

Preheat oven to 325ºF. Place cookies in bowl of food processor, or see Tip #1 below
- 1 pkg. (7 oz.) GOYA® Chocolate Maria Cookies
- 1/2 cup (1 stick) butter, melted
- 1/2 cup dark cocoa powder
- 1/3 cup cornstarch
- 1 1/2 cups milk
- 1 can (15 oz.) Cream of Coconut
- 1 3/4 tsp. Vanilla Extract, divided
- 3/4 cup heavy cream
- 2 tbsp. confectioners' sugar

In saucepan, combine sugar, sugar substitute, cocoa and cornstarch
- 1/2 cup sugar
- Sugar substitute equivalent to 1/2 cup sugar
- 1/2 cup baking cocoa
- 3 tablespoons cornstarch
- 1 cup cold water
- 4-1/2 teaspoons butter
- 1 teaspoon vanilla extract
Slow Cooker Bacon-Ranch Chicken and Pasta

1 Spray 4-quart slow cooker with cooking spray; place chicken breasts in cooker
- 1 lb chicken breasts
- 6 slices bacon, cooked and diced
- 2 to 3 cloves garlic, finely chopped
- 1 package (1 oz) ranch dressing and seasoning mix
- 1 can (10.75 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1/2 teaspoon pepper
- 1/2 cup water
- 8 oz spaghetti, cooked

1. *Filling:* Heat oven to 350 degrees
- Filling:
- 1 box (18.25 ounces) white cake mix
- 3 large egg whites
- 2 tablespoons vegetable oil
- 1 cup chopped Oreo cookies (8 cookies)
- 1 cup canned vanilla frosting
- Coating:
- 3 bags (14 ounces each) pink, yellow and white candy melts (such as Wilton)
- 48 lollipop sticks
- 1/2 cup white nonpareils
- 2 crushed Oreo cookies
Mediterranean Fish Casserole

1. Heat oven to 400 degrees F
- 2 tablespoons olive oil
- 1 pound small white potatoes, cut into quarters
- 2 large Italian frying peppers, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cloves garlic, peeled and chopped
- 4 3/4 inch-thick U.S. Pacific-caught cod or halibut fillets, about 5 ounces each
- 1/4 cup pitted kalamata olives, chopped
- 2 plum tomatoes, seeded and cut into 1/4-inch wedges
- 2 tablespoons lemon juice
- 1/4 cup flat-leaf parsley, chopped

- 1 cup vegetable oil
- 1/2 teaspoon black pepper
- 2 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 1/2 pounds red-skinned potatoes, washed and cut into 1-inch chunks (about 6 to 7 potatoes)
Chicken Fingers with Lemon Sauce Recipe

In small saucepan, combine lemon curd, broth, soy sauce and ginger
- 1 jar (10 ounces) lemon curd
- 1/4 cup chicken broth
- 1/2 teaspoon soy sauce
- 1/4 teaspoon ground ginger
- 1 cup buttermilk
- 1 tablespoon grated lemon peel
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1-1/4 pounds boneless skinless chicken breasts, cut into strips
- Oil for frying
Triple-Chip Cookies

- 1/2 cup butter or margarine, softened
