Hot Shrimp Salad

In a large skillet or wok, stir-fry the onion, celery and peppers in peanut oil for 2 minutes
- 1 medium onion, halved and sliced
- 2 celery ribs, sliced
- 1 small green pepper, thinly sliced
- 1 small sweet red pepper, thinly sliced
- 2 tablespoons peanut oil
- 1 pound uncooked medium shrimp, peeled and deveined
- 1 cup bean sprouts
- 1 garlic clove, minced
- 1 teaspoon minced fresh gingerroot
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 6 romaine leaves, thinly sliced
Southwest Pasta Bake

Cook pasta according to package directions
- 8 ounces uncooked penne pasta
- 1 package (8 ounces) fat-free cream cheese, cubed
- 1/2 cup fat-free milk
- 1 package (10 ounces)frozen chopped spinach, thawed and squeezed dry
- 1 teaspoon dried oregano
- 1 pound lean ground beef (90% lean)
- 2 garlic cloves, minced
- 1 jar (16 ounces) picante sauce
- 1 can (8 ounces) no-salt-added tomato sauce
- 1 can (6 ounces) no-salt-added tomato paste
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1/4 cup sliced green onions

- 3/4 cup (1 1/2 sticks) butter, softened
- 1 3/4 cups all-purpose flour

Cook noodles. Cook egg noodles according to package direction
- 1 pkg whole wheat wide egg noodles
- 1 small onion, sliced
- 2-3 cloves of garlic, minced
- 1 1/2 cups sliced mushrooms

- 1 to 2 cups roasted chicken, cut into cubes
- 1 can 98% fat-free condensed Cream of Mushroom soup

- 3/4 cup nonfat or lowfat plain greek yogurt (you can sub light sour cream)
