Green Bean Casserole

- 2 cups cooked and cubed chicken
- 1/2 cup minced red bell pepper
- 1/2 cup corn, drained
- 1 1/2 tablespoons minced red onion
- 1/4 cup plus 2 tablespoons olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon chopped fresh Italian flat-leaf parsley
- 1 tablespoon Dijon mustard

Bangin' Bruschetta

- 5 tablespoons olive oil
- 1 baguette, cut on the diagonal into 1/2-inch slices
- 1 medium-sized black eggplant, cut lengthwise into 1/2-inch slices
- 1 Vidalia onion, cut into 1/2-inch disks
- Salt
- 2 Roma tomatoes, pulp removed, cut into 1/2-inch cubes
- 1 clove garlic, minced Freshly ground black pepper
- 2 pepperoncini peppers, diced, plus 2 tablespoons pickling juice

Autumn Chicken Pot Pie

- 1 stick butter, cut into pea-size pieces
- 1 (8-ounce) container cream cheese, cut into pieces
- 1 1/2 cups all-purpose flour, plus extra for kneading
- Pinch kosher salt
- 1 egg yolk
- 1 to 2 tablespoons cold water
- Extra-virgin olive oil
- 1 large onion, cut into 1/2-inch dice
- 2 ribs celery, cut into 1/2-inch dice
- 1 large or 2 small carrots, peeled and cut into 1/2-inch dice
- Kosher salt
- 2 cloves garlic, smashed and finely chopped
- 3 pounds skinless chicken legs and thighs
