- 5 cloves garlic, minced

- 1/2 cup chopped parsley leaves, plus more for garnish
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1-ounce grated Parmesan (about 3/4 cup)
- 2 cups arugula leaves, gently packed
