- Extra-virgin olive oil
- 1 large onion, diced
- 1 1/2 pounds lean ground turkey
- Kosher salt and freshly ground black pepper
- 2 cups ketchup
- 1/4 cup yellow mustard
- 1/4 teaspoon cayenne pepper
- 1 tablespoon brown sugar
- 2 tablespoons tomato paste
- 1 tablespoon red wine vinegar
- 12 parker house rolls
- Homemade Bread and Butter Pickles, recipe follows
- 5 pickling cucumbers (about 4 inches long)
- 4 slices fresh horseradish, peeled and cut into 1/2-inch slices
- 4 sprigs fresh dill weed
- 1 cup white vinegar
- 1 cup sugar
- 3 cups water
- 4 cloves garlic, peeled
- 2 tablespoons pickling spice
- 2 teaspoons turmeric
- Kosher salt and freshly ground black pepper
