- 1 cup vodka
- 1/4 cup dry vermouth

- 9 cups water

- 2 1/2 cups yellow cornmeal or polenta

- 10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces

- 1 pound fresh bay or sea scallops
- Kosher salt and freshly ground black pepper

Homemade Applesauce

Preheat the oven to 350 degrees
- Zest and juice of 2 large navel oranges
- Zest and juice of 1 lemon
- 3 pounds Granny Smith apples (6 to 8 apples)
- 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (6 to 8 apples)
- 1/2 cup light brown sugar, packed
- 1/4 pound unsalted butter
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice

- 1 cup (2 sticks) butter, plus more for greasing pan
- 5 ounces unsweetened chocolate
- 1/4 cup unsweetened cocoa powder

Place an oven rack in the center of the oven
- Vegetable oil cooking spray
- Two 3/4-inch slices country style white bread, crusts removed, torn into 1/2-inch pieces
- 1/2 cup whole milk, at room temperature
- 3 large zucchini, trimmed, halved lengthwise
- 1 orange bell pepper, halved lengthwise and seeded
- 1 red bell pepper, halved lengthwise and seeded
- 1 yellow bell pepper, halved lengthwise and seeded
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cloves garlic, smashed and peeled
- 1 carrot, peeled and coarsely chopped

- 1 large shallot, peeled and coarsely chopped

Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth
- 8 ounces cream cheese, at room temperature
- 1/2 cup sour cream
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon minced fresh dill
- 1 teaspoon prepared horseradish, drained
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 pound (4 ounces) smoked salmon, minced
Watermelon Margarita

In a blender, combine the watermelon, tequila, Cointreau, lime juice and ice cubes and puree until smooth
- 2 cups watermelon chunks, seeded
- 4 oz. tequila
- 1 oz. Cointreau or other orange-flavored liqueur
- 1/4 cup fresh lime juice
- Ice cubes as needed
- Salt, to taste (optional)
- 2 lime wedges (optional)
- 2 lime slices

- One 8-ounce package cream cheese, at room temperature
- 2 tablespoons sour cream
- 1/3 cup granulated sugar
- 1 egg
- One 17.3-ounce package frozen puff pastry, thawed
- All-purpose flour, for dusting
- 10 strawberries, sliced
- Demerara sugar, for garnish
- 1/4 cup pistachios, chopped
