Cream Puffs - Appetizer

Appetizer - Linda Anderson
- 1 loaf of white bread
- 1 cup mayonaise
- 1/2 cup parmesan cheese (finely grated)
- minced onion
- Worchestershire sauce, - few shakes
Margaritas

Add crushed ice, shake well or blend
- 2 oz tequila
- 1 oz triple sec
- 4 oz sweet & sour
- 1 oz collins mix
- 1 egg white or 2 splashes frothee
Hot crab dip

Appetizer, serve with crackers or toast points
- 1 pound jumbo lump crabmeat, free of shells
- 1 cup grated pepper jack cheese
- 3/4 cup mayonnaise
- 1/4 cup grated Parmesan
- 1/4 cup green onions, minced, optional
- 5 6 roasted garlic cloves or 2 cloves minced
- 3 tablespoons Worcestershire sauce
- 2 tablespoons fresh lemon or lime juice
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon dry mustard
- salt and pepper
Savory Cheddar Biscotti

Unsweetened biscotti, good with red or white wine
- 2 eggs
- 1 cup grated Cheddar cheese
- 1 cup plus 2 tablespoons all-purpose flour, plus more as needed
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1/4 tsp cayenne, or to taste
Clam Dip in bread round

Excellent, allow time to cook
- 3 packages cream cheese (large softened)
- 3 cans chopped clams (drained, reserving clam juice)size of a can of tuna
- 2-3 tsps minced garlic
- 1/2 cup of reserved clam juice
- tops (white part) of 3 bunches of scallions (or less if preferred)
- 1 large round unsliced hollowed out french, sheepherder's or sourdough bread. (save inside of bread for dipping)
- 1 thin loaf of french bread slice 1/2 inch for dipping.
Crab Puffs

Made with English muffins - better if muffins are lightly toasted prior to adding topping
- Large English Muffins - could use regular
- 2 jars old English cheese spread
- 1 can crab meat - drained
- 1/2 - 1 cube soft butter
- garlic salt to taste
- Chives to garnish (after they come out of broiler)
Mushroom crescents

- 2 cans crescent rolls
- 2 small cans mushroom stems and pieces, drained
- 3 oz softened cream cheese
- seasoned salt (Lawry's)
- Worscestershire sauce - a couple of shakes
Broccoli cheese bake

Side dish, very rich. Best served with plain meats or chicken
- 2 tablespoons butter
- 1 cup chopped onion
- 4 cups broccoli florets (smaller florets cook more quickly)
- 1/2 cup mayonnaise
- 1 can condensed cream of celery soup
- 2 cups grated sharp white cheddar cheese
- 1/2 cup dry bread crumbs
- 2 tablespoons butter, melted
Broccoli salad

Side dish, may add chicken if desired
- Dressing:
- 2 pounds broccoli florets, cut into bite-sized pieces
- 1/3 cup raisins
- 1/4 cup pine nuts
- 1/2 pound penne, bow-tie pasta cooked and chilled
- 3 green onions, chopped
- 1/2 cup bacon, cooked, crumbled
- 1/2 cup brown sugar
- 1 cup mayonnaise
- 2 tablespoons red wine vinegar
