1. In a medium bowl, whisk together the buttermilk and eggs
- 3/4 cup buttermilk
- 2 eggs
- 1 8.5oz box corn muffin mix
- 1 lb lump or backfin crabmeat, well drained and picked clean of shells
- 1 cup frozen corn kernels, thawed and drained
- 5 green onions (scallions), white and light green parts, trimmed and chopped
- 2 1/2 teas hot sauce
- 1 teas salt, plus more to taste
- 1/4 teas pepper, plus more to taste
- peanut or vegetable oil for frying
Fresh Glazed Apple Cake

- FOR CAKE:
- 1 1/4 cups canola oil
- 2 cups sugar
- 3 eggs, at room temp
- 2 teaspoons vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 cups peeled and diced assorted apples
- 1 cup finely chopped pecans
- FOR GLAZE:
- 3/4 cup sugar
- 1/2 cup evaporated milk

1. Boil the potatoes, covered, in plenty of water until they are soft when pierced with a fork
- 10.5 oz unpeeled potatoes (about 2)
- 1 pound 2 ounces ground beef
- 1 res onion, grated
- 2 tablespoons coarssely chopped italian parsley
- 1 teaspoon dried oregano
- 1 teaspoon dried mint
- Good pinch of ground cinnamon
- 1 egg, lightly beaten
- Salt and freshly ground black pepper
- All purpose flour for dusting
- Olive oil, for frying

1. Preheat oven to 350 degrees
- 3 tblsp slivered blanched almonds
- 6 tblsp sugar1 1/4 cups (spooned and leveled) all purpose flour
- 2 teas grated orange or lemon zest
- 1/4 teas salt
- 6 tblsp unsalted butter, cold and cut into pieces
- 12 oz bittersweet chocolate, coarsely chopped
- 1 1/4 cups heavy cream

- 1/3 cup sugar
- seed fom 1/2 vanilla bean or 1 teas vanilla extract

- 5 tblsp fresh squeezed lemon juice
- 1/3 cup sugar
- 1 tblsp limoncello liqueur
- FOR ORANGE:
- 5 tblsp fresh squeezed orange juice

- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 1 teaspoon honey, optional (or substitute any preferred sweetener)
- 1 tablespoon orange marmalade
- 1/4 cup drained canned mandarin oranges (or fresh chopped orange)
