Thai Garlic Pepper Chicken

Garlic and Pepper Chicken (gai pad gratiem prik thai) is a very common dish
- 4 chicken breast, sliced into thin bite-size pieces (3/4 cup)
- 1 cup garlic cloves, smashed
- 1 TBS palm sugar (or white sugar)
- 1 TBS white pepper powder or black pepper powder (or mix 'em!)
- 7 teaspoons fish sauce
- 1-2 tablespoons vegetable oil (enough to coat bottom of pan)
- 3/4 cup water
- 1 teaspoon coriander leaves (for garnish)

- 2.5 TBS Creole Mustard (2 TBS Dijon, 1/2 tsp Worchestershire sauce, 1/2 tsp hot Sauce)
- 2.5 tsp salt
- 2.5 tsp sugar
- 5 cloves of minces garlic
- 5 tsp prepared horseradish.
