In a large bowl or the bowl of a stand mixer, combine the starter, milk, water, sugar, egg and butter
- 250 g (about 1 cup) mature 100% hydration starter
- 150 g (scant 2/3 cup) whole milk
- 25 g (5 tsp) water
- 15 g (3 1/2 tsp) granulated sugar
- 1 large egg, lightly beaten
- 45 g (3 tbsp) unsalted butter, melted
- 450 g (3 2/3 cups) all-purpose (plain) flour
- 8 g (1 1/3 tsp) fine salt
- extra milk for brushing
- extra flour for dusting
Indian Fish Coconut Curry Recipe

1. Wash the fish and pat very dry
- 1 pound boneless, skinless fish fillets
- 1 tablespoon vegetable oil
- 1/2 onion, grated on large holes of box grater
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, finely minced
- 1 fully ripe tomato, diced or 1 1/2 cups canned diced tomatoes
- 1 teaspoon garam masala
- 1/4 teaspoon chili powder (cayenne)
- 1/2 teaspoon salt
- freshly ground black pepper
- 1 cup coconut milk
- 1/4 cup water
- 1-2 fresh chili peppers, cut in half lengthwise
Spaghetti Squash with Lemon, Butter and Sage

Preheat oven to 375º. Wash and dry spaghetti squash and halve lengthwise with a sharp knife
- 1 spaghetti squash
- 2 teaspoons olive oil for roasting the squash

CURRIED WILD RICE & CHICKEN CHOWDER

In a small saucepan bring wild rice and water to a boil
- 1/4 cup wild rice
- 3/4 cup water
- 2 tablespoons olive oil
- 2 teaspoons butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, shredded
- 1 stalk celery, diced
- 1 small zucchini, diced
- 1/4 cup flour
- 4 cups low-sodium chicken broth
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 bay leaf
- 1/2 teaspoon dried chives
- 1/2 teaspoon dried thyme
- 1/4 teaspoon sage
- 1/8 teaspoon freshly grated nutmeg
- 3/4 teaspoon yellow curry powder
- 2 cups shredded chicken breast
- 2 teaspoon fresh, minced parsley
Mixed Berries in Red Wine Syrup

In a heavy saucepan over medium-low heat, combine wine and sugar
- 1 bottle (750ml) fruity red wine
- 1/3 cup sugar
- 1 teaspoon vanilla bean paste
- 1 cup (8 ounces) fresh blueberries, rinsed and drained
- 1 cup (8 ounces) fresh raspberries, rinsed and drained
Pork Chops with Wine and Garlic

- 6 whole Pork Chops (medium-to-thin)
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter

- 1-1/2 cup Red Wine
- 1/2 cup Beef Broth (more If Needed)
- 1 whole Bay Leaf
- 1 Tablespoon Balsamic Vinegar
- 18 whole Peeled Garlic Cloves

1. Combine the pork with 1 teaspoon of the cornstarch and the soy sauce
- 1/2 * 1/2 lb. minced pork
- 3 * 3 teaspoons cornstarch
- 1 * 1 teaspoon dark soy sauce
- 8 * 8 oz. baby shrimp
- 1 * 1 teaspoon Shao Hsing wine or white wine
- 2 * 2 tablespoons vegetable or corn oil
- 1/2 * 1/2 cup shredded bamboo shoots
- 8 * 8 oz. shredded carrots
- 1/2 * 1/2 cup chicken broth
- 1/2 * 1/2 lb. fresh bean sprouts

Set your crock pot on high, then add onions, garlic, brown sugar, butter, salt and balsamic and mix until combined
